To Roastmaster Alan Tolson, roasting coffee is
like tuning an Italian racecar; delicate, smooth, and hot. Heavy metal, combined with the proper air
circulation, a trained hand, a good nose and many hours of experience from thousands of batches, is the
key to the perfectly roasted bean.
In 1995 my search for the perfect coffee roasting machine took me to San Francisco where I saw a working Probat
roaster that was over 50 years old. I wasn’t impressed with the new machines with automatic computer
controls. Our Probat roaster is all manual that allows Alan to personally control and fine-tune every
batch to perfection. It goes without saying that we start with the best Arabica beans available from
coffee producing countries around the World.
